All the ingredients you will need:
- 2 Large chicken breasts or 1 small butternut squash diced
- 50g unsalted butter/veggie/vegan substitute
- 1 onion (chopped)
- 1 leek (chopped)
- 350g risotto rice
- 2 litres veg stock (approx.)
- 60g parmesan or cheddar or vegan cheese substitute
- 8 large tablespoons chopped herbs (Parsley, coriander, Chives, and 10 leaves basil)
- Salt and pepper
- 30g Butter/veggie/vegan subsitute
- Splash rapeseed oil (other oils are fine as alternatives)
- 1 lemon
